Description
It is an extremely popular spice all over the world, and is used widely in Indian, Middle Eastern, North African, Mexican and Spanish food. There is even a Dutch cheese flavoured with Cumin Seeds. (Leidsekaas) For a taste of Southern India, fry Cumin Seeds in butter with some onions; add to soaked lentils, and you have a simple dhal to accompany your curry.
Cumin is also used widely in the Middle East, in tagines, falafel and hummus. If you like fragrant, gently spiced foods, then this is a store cupboard staple.
