The seeds are an essential ingredient of Indian and Chinese spice blends, and are often given out at the end of an Indian meal as a breath freshener. Fennel Seeds are also used widely in Europe where the plant is native to the Mediterranean and is typically found in southern European cuisine. In France it is widely used with fish and seafood, and in Italy it can be found in many different foods, including sausages and of course, pasta sauces.
Try flavouring olive oil with Fennel Seeds, thyme and oregano and using it as a marinade for vegetables or sea foods. Eat the vegetables as appetizers together with crusty white bread and a glass of red wine.
